In keeping with Vidal’s small batch winemaking philosophy, unique sites were harvested, fermented and matured as individual batches to capture the distinctiveness of each site. Fully destemmed grapes were fermented and macerated on skins for up to 30 days before being pressed and transferred to French oak barriques (40% new) where the wines underwent malolactic fermentation. Maturation in barrique for 18 months has evolved the wine’s character and flavour while softening the tannins.

Vineyard

Fruit for this wine was grown in the premium Hawkes Bay sub- region of the Gimblett Gravels. The soils consist of recent alluvial deposits of gravel, that combine with high temperatures to create a low yielding, free draining environment suitable for later ripening red varieties. Beyond this natural environment, particular attention is paid to vine health and yield restriction with a focus on creating an open canopy to encourage light penetration and minimise moisture retention. Fruit was harvested in good condition, at the point of flavour and tannin ripeness as well as balanced acidity.

“The nose is refined in presentation and elegantly concentrated with rich, ripe aromas of spicy black plums and liquorice notes, along with ripe blackcurrant and cassis elements. The fruit is lifted by spicy, toasty oak. Medium-full bodied and elegantly proportioned, this has a tightly bound core of succulent and sweetly ripe black plum and blackberry fruit, along with liquorice and lifted spicy, toasty new oak. The tannins are refined and provide a smooth-flowing, fine-textured structure and line, carrying the wine to a long, lingering finish of plums, spices and oak. This is a very elegant and refined, succulent Merlot/Cabernet blend with sweet and spicy fruit and oak. Match with lamb, beef and venison over the next 6-8 years. ”
